Khinkali is the main dish of Georgian cuisine (at least for tourists). They say you can judge a good khinkali, or Georgian dumpling, by how many folds it has: Tradition dictates that fewer than 20 is amateurish. Khinkali is a finger food, so put your fork aside! Eating khinkali requires urgency and exacting technique.
